I forgot to mention, this process has cut my backup time down to about 6 hours from 16 hours.  I’m backing up about 400GB worth of data.  We don’t have much data change nightly, so all that time is spent processing.

I’m backing up to a removable hard drive in another computer over iSCSI.  I have two of these drives and I replace them and take one offsite.  The idea is that if Server1 goes down, I already have a recent copy of the VM’s in Server2 just sitting there ready for me to click start and be back up and running.  This weekend I’ll test this out to make sure it all works and I’ll let you know what happens.
